Free State Kitchen on Maryland Street does American diner food at a level that makes the genre respectable. The burgers are the best argument.

The American Diner Done Right

Free State Kitchen on Maryland Street occupies the space between casual American diner and serious food operation. The format is American – burgers, loaded fries, smoked meats, the kind of menu that doesn’t require much translation – but the execution is British in the sense that the ingredients have been sourced with the attention that British food culture has learned to apply to everything. The beef is good British beef, the buns are made properly, and the whole operation understands that a good burger is a precision instrument rather than a demonstration of generosity.

The Burgers

The FSK burger – a smash-style patty with American cheese, pickles, and a sauce that the kitchen has been developing since the place opened – is one of the best burgers in Liverpool. The smash technique caramelises the outside of the thin patty in a way that creates flavour the thicker versions can’t replicate. The double is the standard order; the single is for people who also want the fries and know what they’re doing.

The Beer

The craft beer selection at Free State Kitchen has been consistently one of the better lists in this part of the city centre – rotating taps, good range of styles, and a staff selection policy that puts flavour over familiarity. The combination of good beer and good burgers is the entire brief, and it is met with enough consistency to make this a regular rather than a destination.

The Atmosphere

Maryland Street is a quieter corner of the city centre, which gives Free State Kitchen a neighbourhood feel that the more central venues can’t replicate. The regulars here treat it as their local; the city centre crowd treats it as a discovery. Both are right. Maryland Street, L1.
